gluten free protein balls

There are many ways to make protein balls and personally I think they make a perfect treat or pre-workout snack if you have a bit of a sweet tooth or chocolate craving.
As you know I like to create recipes not only for taste but for a purpose, nutritionally speaking. So I created these as a pre-workout snack using a base of seeds which are packed with zinc and protein.
Zinc is essential for hormonal and reproductive health in both men and women, growth and repair of muscles (needed for protein synthesis), and proper functioning of the immune system and metabolism. Zinc is also essential in over 300 enzyme reactions in the body, can assist with weight loss through appetite and digestion, help reduce stress, healing for acne and wounds, and prevention of colds amongst other important functions.
Ingredients (makes 12):
- 1 cup seeds (pumpkin & sunflower seeds)
- 1 scoop vegan protein powder (I use PranaON)
- 10 medjool dates
- 1 tbls raw cacao powder
- 1/2 cup (unsweetened) desiccated coconut, plus extra for rolling
- 1/2 cup water
Blend all ingredients in a food processor until sticky. Roll into balls, dust with extra coconut and set in the fridge for at least an hour before enjoying!Eat clean treats & train hard!
